Lemon Thyme Vinaigrette

fullsizeoutput_1afdSummers are for backyard barbecues and delicious citrus flavours. That is where my favourite salad dressings come into play. 


3 Tbsp of lemon Juice

Lemon zest from half a lemon

1 small garlic clove, finely minced

3 Tbsp of honey (adjust to taste depending on how sour the lemon is)

2 Tsp white balsamic vinegar

1/4-1/2 cup extra virgin olive oil

Salt and Pepper to taste



If you have a mason Jar, add all the ingredients and give it a good shake


In a small bowl, whisk together all the ingredients except the oil, salt & pepper


While you are whisking, add the olive oil in a slow and steady stream. Continue whisking until the vinaigrette is emulsified.

I find the flavour of this dressing goes well other flavours on your plate. I personally like this dressing with spinach and add mandarin oranges.
