Brown Rice Oatmeal- InstantPot

Funny how my go breakfast during my detox also became my favourite dish.

Made in an Instapot.

Ingredients:

1 cup Brown rice short grain

3 cups water

1/2 Tsp Cinnamon

1 Tsp Vanilla

Directions:

Cook High pressure 30 minutes, natural pressure release (approx 20 min)

Once complete add 4-6 tablespoons of coconut milk (full fat or light)

Reheat cold oatmeal with coconut milk. I like to add stevia to this step since it was also allowed. Add desired topping. Here I like using poached apples, or berries and shredded coconut. IMG_6527
