I typically don’t crave chocolate or sweets. But somehow every now and then I crave these bad boys. They are healthy and delicious and definitely kid approved.
The secret ingredient is black beans! I know, sounds crazy until I tried this recipe. Trust me when I say you can’t even taste the beans.
Added bonus, black beans are a great source of fiber, potassium, folate, and vitamin B6 to name a few.
1 (15.5 ounce) can black beans, rinsed and drained
3 tablespoons coconut oil
1/4 cup unsweetened cocoa powder
3/4 cup coconut sugar or healthy sugar alternative
1 teaspoon vanilla
1/2 teaspoon baking powder
1 pinch salt
Chocolate chips to sprinkle on top
Preheat oven to 350 degrees. Place all the ingredients except the chocolate chips in a food processor.
Process until smooth. Pour into a greased 8×8 pan and sprinkle chocolate chips on top. Bake for 30-35 minutes.
***I like to make these as muffins so that it is easier for portion control, and freeze***
