We love zucchini boats! It has become a staple dinner in my household and one that my kids ask for weekly. Best part about them, is they are healthy and can be filled with any ingredient your heart desires.
My favourite way to make them is by making a ground beef or turkey “spaghetti sauce” and using this as the filling of the Zucchini. Your options are limitless, you can add corn and bean and make it veggie filling, or make a “chicken fajita” boat and add grilled chicken and peppers.
Here’s how I like to make them.
1 tsp. olive oil
1/2 lb. 99% lean ground turkey or beef
1/2 onion chopped
2 garlic clove, minced
1/2 tsp. oregano
1/2 tsp. basil
1 cup marinara sauce
Shredded mozzarella cheese
Preheat the oven to 400 degrees.
Heat the olive oil over medium high heat. Add the turkey, onions, and garlic. Cook until meat is fully browned, about 6-8 minutes. Season with salt and pepper.
Stir in the oregano, basil, and marinara sauce.
Cut the zucchini in half and scoop out some of the centre, I like using a melon baller. Place in a baking dish or deeper baking pan. I like to lightly brush the zucchini with olive oil.
Once sauce is ready, fill the zucchini boats with the mixture.
Top each with shredded cheese of your choice. I like using mozzarella and 1/2 tbsp parmesan cheese.
Bake for 18-20 minutes until zucchini is tender.
